To limit friction of the moving parts a small amount of lubricant is applied at very strategic points. With time the lubricants get dry and friction increases. As this happens the parts start to wear down creating dust that in turn spreads throughout the movement.  The friction and dust eventually cause the watch to stop functioning.

Gaskets in a water resistant watch deteriorate over time allowing humidity to get inside. Rust will spread rapidly necessitating expensive repairs. The last thing you want inside your watch is moisture.
